Any way you decide to go will be just fine. 160 is fine and 149 a bit narrower but very pretty. Have you driven a coach before as 149 will be a twisty and windy, a bit slow but beautiful. We were out  there in our 40 footer a couple years ago and really enjoyed it.

US 50 is curvy from Canon City to Salida, but fine for large vehicles. The speed limits are low in places for a reason. There are passing lanes for traffic behind you to get around. West of Salida just past Poncha Springs the climb begins to Monarch Pass 11,312 ft. Or thereabouts. The highway on that stretch is all good. Exhaust brake or Engine brake will be very helpful. I like the KOA  in Gunninson because it is near the airport. Enjoy watching the occasional take offs  or touch and go s , by Air Guard AC-130s. It is not a busy airport.  Some good eateries in town.
